Dear Coffee Enthusiast,
A few years after marrying my Indonesian wife, one of her relatives offered to send me some Kopi Luwak, or civet coffee, since they knew how much I love coffee. I got my first package and instantly knew this was something different. It was the smoothest, dreamiest, most flavorful coffee I’d ever had. It had the creaminess of a finely ground dark roast, a bold coffee taste, but without the acidity or bitterness you usually get from other beans.
What makes it unique is how the civets eat only the ripest coffee cherries. Their digestion naturally lowers the acidity and brings out a really smooth and rich flavor. When it’s roasted right, like our friends at AZA Coffee & Roastery do, it turns into something incredible.
AZA’s coffee is Certified Wild. That means the civets aren’t caged or force-fed. Instead, local collectors hike through the rainforests where wild civets live, searching for their droppings near natural coffee plantations. It’s tough work, climbing steep hills and navigating thick jungle, which is part of why this coffee is so rare and valuable.
When we started sourcing, we quickly found out that most suppliers use caged civets because it’s easier than hunting for beans in the wild. Some say that less than 0.2% of all civet coffee is actually wild. That made it even more important to find a supplier that was certified and truly ethical.
My wife and I traveled to Gayo-Aceh in April 2025 to meet the people behind the process. We’ll be heading back in October to see the wild collection firsthand. We want to make sure everything we offer lives up to the promise of being real, wild, and responsibly sourced.
